The Ultimate Snack and Lunch Guide

They’re easy, they’re delicious, they’re mostly Paleo and they’re totally portable!  Quiet your hungry monster.  Remember: to make snacks and lunches super easy, COOK ONCE to EAT TWICE! ​
Sandwich Land: 
  • Wraps- turn any sandwich into a wrap with lettuce
  • Apple and turkey or ham sandwiches- the apples are the bread, great with mustard
  • Ham, green onion and avocado roll ups- the ham is the tortilla
  • Cucumber sandwiches- tuna- the cucumber is the bread
  • Bell pepper sandwiches- the bell pepper is the bread
  • Bacon and guacamole sandwiches- the bacon is the bread
  • Banana sandwiches with almond butter
  • Seaweed hand rolls  

Dip Land: 
  • Apple slices and almond/cashew butter
  • Chile lime cucumbers as “chips” and salsa or guacamole
  • Olive oil potato chips and baba ganoush
  • Sweet potato fries with honey mustard dipping sauce
  • Carrots and almond/cashew butter- great for dipping
  • Veggies and baba ganoush

Just Veggie Land: 
  • Paleo Snack Packs (carrots, bell peps, radish, cucumber and jicama in Tupperware)
  • Marinated tomato slices (balsamic and EVOO) and basil
  • Avocado toast with sliced tomatoes
  • Avocado, spoon, hot sauce
  • Seaweed sheets
  • Gourmet olive mix
  • Spiced pumpkin seeds
  • Roasted eggplant and Paleo ranch
  • Kale chips

Salad Land: 
  • 5 steps salad builder: choose your greens, choose 1-3 veggie toppings, choose a protein, choose your dressing, choose your nuts or seeds 
  • Tomato and cucumber salad 
  • Watermelon mint salad 
  • Mexican quinoa salad with corn and avocado 

Sweet Land: 
  • Dark chocolate bar
  • Dark chocolate covered fruit 
  • Homemade fruit leather
  • Pomegranate seeds and fresh strawberries 
  • Trail mix
  • Lara bars
  • Frozen grapes
  • Dried or dehydrated fruit (apricots, mangoes and apples are amazing!)
  • Fresh coconut chunks
  • Fruit and nuts in coconut milk (pretend cereal!)
  • Steel cut oatmeal raisin cookies
  • Fruit bowl (melon, pineapple, apples etc) with coconut milk
  • Smoothie- add some spinach or kale!
  • Pineapple slices 

​Protein Land: 
  • Sardines and bell pepper slices- I like the sardines in marinara
  • Hardboiled eggs with spice packets- use foil and wrap up salt and pepper
  • Can of tuna with pickles and mustard- add Paleo mayo if you like
  • Meatballs with tomato sauce- great cold too
  • Leftover burger patties with mustard and kraut
  • Quinoa cakes and Paleo ranch
  • Ham or prosciutto wrapped around melon
  • Turkey patties with sprouts and Paleo ranch 
  • Grass fed hot dog and raw kraut with mustard
  • Beef jerky or homemade 
  • Egg muffins 
  • Scotch eggs 
  • Pork Rinds with hot sauce
  • Smoked salmon, onion and capers (lox), and lemon
  • Mashed sweet potato, raw veggies and some bacon
  • High quality salami, sliced pepperoncini’s
  • Leftover meat and horseradish for dipping
  • Cold veggies and leftover meat- pour hot bone broth before eating
  • Chili or stew in a Thermos  
  • Cold shrimp and cocktail sauce 
  • Paleo poke bowl
